Hainanese Curry Lamb Shank. Originally it supposed to be Hainanese Curry Mutton, as my place is also famous with her Hainanese Mutton Soup (see below), so I gave it a twist by using Lamb Shank. This is really a worth trying dish! 海南咖哩羊腿是道改良的新年佳肴, 而是道值得一試的美食. 除此之外, 海南燉羊湯也是本店主菜之一.2nd - Hainanese Braised Duck.
Duck is famous in one of the town in Hainan Island called "Kai-Chek", with dish name "Kai-Chek Ak". Unlike other braised duck that you find elsewhere, this came with 5 spices too. Emm.... it is simply yummy!! I personaly like it very much! 加積鴨是道海南加積市的著名美食. 在父之廚, 我們稱為海南五香鹵鴨. 將起味和五香料聯合, 在鹵上個1小時半, emm.... 好吃好吃 :)3rd -
Hainanese Pork Trotter. Pure Hainanese may love it, for the rest, I am not sure as it came with the fat and bones that needed you to really bite. And, it give you more towards 5 spices taste. Again, provided you do like 5 spices taste! 如你喜歡在ハ角及貴皮味中享用肥肉, 我想你可喜歡這道海南豬蹄啦!4th - Hainanese Pineapple Chicken Offals!
This is a very traditional dish among Hainanese, and I think it almost lost among the younger generation, especially many do not cook! It uses garlic, soya sauce, oyster sauce and cooking wine to made up, and you will find it a bit salty and sweet with garlice fragrant smell.
